2020 Great Southern Cabernets
Harvest: 11-03-2020 to 18-03-2020 | Bottled: 09-08-2021 | Alc: 13.5% | pH: 3.6 | T.A.: 6.5g/L
Colour: Deep red with vibrant hues.
Bouquet: Fruit notes of black currants and raspberries that are balanced by tobacco leaf characters and quality French oak.
Palate: The entry into the palate is rich and generous with berry characters. These are framed by tobacco leaf characters and cedary French oak. The tannins are mid weighted and well-integrated, giving balance and savoriness. The finish is rounded and long. A good example of a cool climate cabernet blend from what was a consistent vintage in Western Australia.
Food pairing: Enjoy with pasta and red meats.
Cellaring: Enjoy over the next six to eight years.
Winemaking: The Cabernet Sauvignon and Cabernet Franc are fermented separately and blended just before bottling. Prior to bottling the wine is fined with a pea based (vegan friendly) fining agent.
